Romanian pea & potato soup
(Ciorbă de mazăre)

A hearty, comforting, oil-free Romanian soup packed with vegetables and flavor.

This is one of those simple, satisfying soups I love making when I want a generous bowl of comfort food without any oil.

Servings: 6 generous portions

Ingredients

2 medium potatoes, diced
2 carrots, sliced
1 onion, diced
2 celery stalks, sliced
1 orange bell pepper, diced
¾ cup tomato sauce (or 5 grated Campari tomatoes)
1 tsp sweet paprika
6 cups vegetable broth (or 6 cups water + 1 tbsp Vegeta)
400 g frozen green peas
Fresh dill, chopped
Fresh parsley, chopped
3 tbsp vinegar, or to taste

Instructions

1. Add the potatoes, carrots, onion, celery, bell pepper, tomato sauce, paprika, and broth to a large pot.
2. Bring to a boil, reduce heat, and simmer for 15–18 minutes, until the potatoes are almost tender.
3. Add the frozen peas and simmer for another 8–10 minutes.
4. Turn off the heat. Stir in the fresh dill, parsley, and vinegar to taste.

Enjoy!
