A hearty, comforting, oil-free Romanian stew packed with potatoes, green peas, and vegetables.
This is one of those traditional Romanian meals I love making with simple pantry ingredients. Tender potatoes and sweet green peas simmer in a flavorful tomato sauce, finished with plenty of fresh dill. No oil needed, just a generous, satisfying meal!
Ingredients
3 cans (15 oz each) green peas, drained
4 medium red potatoes, diced
1 extra-large onion, chopped
1 red bell pepper, diced
1 yellow bell pepper, diced
1 can (14.5 oz) diced tomatoes, with juices
2 tsp sweet paprika
Salt, to taste
Plenty of fresh dill, chopped
Instructions
1. In a large pot, sauté the chopped onion and bell peppers with a splash of water for 5–7 minutes, until softened.
2. Add the diced potatoes, diced tomatoes with their juices, paprika, salt, and pepper. Pour in just enough water to cover the potatoes.
3. Cover and simmer for approximately 20 minutes, or until the potatoes are tender.
4. Add the drained green peas and simmer uncovered for another 5–10 minutes, allowing the sauce to thicken.
5. Stir in plenty of fresh dill and serve warm.
Enjoy!
